Wrap up Chef Mark’s three-part Essentials series with Essentials III, the class where everything comes together. This session is all about mastering core cooking methods—the techniques that sit underneath virtually every great recipe. From braising and sautéing to blanching, poaching, pan roasting, baking, and more, you’ll learn not just how to do each method, but when to use it and why it works.
Chef Mark will demonstrate professional approaches to heat control, timing, seasoning, and texture, so you can confidently adapt to any ingredient or recipe that comes your way. By the end of class, you’ll understand the building blocks of cooking well—and feel ready to tackle anything from a weeknight dinner to a special-occasion meal without second-guessing yourself.

- Braised Pork with Cabbage

- Pan Roasted Chicken
- Perfect Roasted Potatoes & Sautéed Vegetables plus sauces for each protein
Series option: Essentials III is the third and final class in the Essentials series. You can register for each class individually, or sign up for all three at once for a series discount. Registering for the full series totals $285 per person.
After this class you will have the confidence and techniques to make any recipe feel doable—and delicious.

Booking Your Spot
Reserve your seat online, by phone, or in person at Chefs’ Haven. Classes are limited to 10 participants so everyone can watch, learn, and interact with Chef Mark.
Payment & Deposits
For regularly scheduled classes (those that Chef Mark schedules in advance) a $50 non-refundable deposit per person is required at booking and applied to your total class fee.
For private classes, a $250 deposit is due once a date has been determined. This deposit will be credited against the amount due the evening of your class.
The balance is due at the end of class.
We accept cash, check, credit card, or gift certificate.
Credit card payments include a 3.9% processing fee.
Using a Gift Certificate
To redeem a gift certificate, contact us before booking at mark@chefshavende.com (preferred) or 302-234-2040. Please have your certificate number and the amount available.
Class Minimums & Cancellations
Classes require a minimum of 4 participants. If fewer than 4 are booked, we’ll notify you by phone. You may reschedule or request a full refund.
Extras for You
All participants receive printed recipes for every dish prepared in class.

We understand plans change. If you can’t attend, feel free to send a friend in your place. Otherwise, please notify us at least 5 days before your class by email, phone, or in person (include the reservation name, class date, and number of attendees).
With proper notice, you may reschedule at no extra cost. Without the required notice, your deposit is non-refundable.
